We obtain our vegetables and fruits primarily from regional producers. Short supply chains and sustainability are just as important as future-oriented and ecological cultivation methods. We know our suppliers and maintain a good exchange with them. Together we are constantly looking for new products and culinary rarities from the region.

That's how we know it. Not with us. Plant-based cuisine is our norm. But since we don't see ourselves exclusively as a vegetarian or vegan starred restaurant, everyone gets their money's worth here. Because our pescatarian and omnivorous menus are also based on the same vegetable-focused kitchen philosophy.
So the whole family can find space at our tables and everyone can find the right menu for themselves.
FOCUS ON VEGETABLE PRODUCTS
Depending on the season, we use products that we collect ourselves or that our suppliers cultivate with passion on their fields and farms. That's why we also try to process the whole plant, from the root to the leaf, and create particularly interesting flavors and textures through a wide variety of cooking, fermentation and preservation methods.

WAIVER WITHOUT DEPRIVATION
For us, a menu without animal products is not synonymous with an evening full of deprivation. The sentence "I never missed meat and fish." is very common in our restaurant.
But why is it like that? We don't create our dishes in the classic way and then simply omit the supposed main component or replace it with known replacement products.
We trust in the outstanding quality and variety of our basic plant products and emphasize them through creativity and craftsmanship. An extra effort that is worth it and that you can taste.
